Dream Bars: Christmas Mince Pie Substitute


This recipe is from my friend Mike who says, it is "for people like me who can’t get their acts together early enough to bake real mince pies". He says it definitely beats bought mince pies.


Dream Bars Recipe

Base

3 oz (90 grams) butter
1/3 of a cup brown sugar lightly packed
1 cup plain flour

Topping:

2 eggs
½ cup brown sugar firmly packed
1 teaspoon vanilla essence
1 tablespoon plain flour
1 teaspoon baking Powder
1½ cup coconut
1 cup bottled fruit mince (I use half fruit mince, half cake mix)

Method:

Beat butter, sugar until light and creamy. Stir in flour. Mix well. Press into lined and greased tin 28 cm x 18 cm. Do not use larger tin otherwise the topping is too thin.

Bake at 350 degrees for 10 minutes

Remove from oven and spread prepared topping over this.

Topping:

Beat eggs, sugar and vanilla until thick and creamy. Fold in sifted flour and other dry ingredients. Fold in fruit mince. Mix well.

Once you have mixed the topping and spread it over the base, it needs to go back into the oven for 25 to 30 minutes at 350.

Allow to cool in tin.

Cut into squares and dust with icing sugar before serving.

Looks like a little but makes about 24 to 30 squares.
