We eat with our eyes - so it's always good to create a feast for them. 

My father was Norwegian, and my godmother always had green and red drinks for the holidays.

Partly in memory of him, and mostly because it is so much fun, I've started making our Xmases red, white and green - down to the snacks and most of eats. 

We also often have a Christmas Eve supper, partly again because of the Norwegian link but also because it then makes it easy for everyone the next day to be with their larger families, particularly now we have spouses (spice?) involved. 

Hence, you don't want to replicate what you have for Christmas Day lunch on Christmas Eve, and hence I undertake to provide a completely different supper, one moreover that can be solved cold, with a focus on salads and pork products. 

So, for snacks to begin with,  may I suggest white cheddar cheese and red and green cocktail onions?

We also provide motzarella, basil and tomato snacks, green olives and some radishes (which were meant for decoration mostly but got gobbled up super-quick):

I always serve Kir Royale (champagne with blackcurrant liqueur), though this year we are trying it with raspberry liqueur instead, and the children have strawberry juice and pomegranate juice. 

In years past, I have insisted on making my own gammon, since it looks prettier:

I pair it with potato salad with fresh parsley cut into it, pork ribs (served cold), fresh bread and fresh salad from our garden:

For dessert, there is always ice-cream with a berry sauce, made by my husband (I'll get the recipe this year and update it), and, of course, my favourites, melt-in-the-mouth, chewy meringues (coloured red and green, of course) with freshly whipped cream:

And, of course, you must serve coffee later, complete with Christmas mince pies:

However, this is such an easy meal to put together, that is fun and colourful, and different from your usual Christmas fare, and it is particularly suitable for those of us who live in the Southern hemisphere, where Christmas Day is often swelteringly hot and humid.
